Copeland's
History...
Copeland's of New Orleans' roots are
part of a culinary evolution that has sparked a revolution in
cooking throughout the United States. The city called "The Big
Easy" is renowned for its exciting cuisine, among other unique
attributes.
New Orleans Creole and Cajun cooking
heritage is basically city and country combined. The Creoles
were descendants of the French and Spanish settlers, whose cooks
added African and American Indian touches to this cooking
tradition. The Cajuns were hunters, trappers and fisherman who
favored freshly prepared game with heavier spices. Copeland's
menu is resplendent with a marvelous combination of Creole and
Cajun. The sauces, spices, freshness of every ingredient and
pride of the cook, is evident in every Copeland's creation.
Al Copeland was born and raised in
New Orleans. As a young hourly worker at a supermarket lunch
counter, he asked a fellow worker who always worked faster and
harder than everybody else why he hustled so much. "I just
want to be the best, that's all." That's all it took for young
Al Copeland, who knuckled down and soon out performed his
co-workers. Al's drive to be the best later proved
strong. He gave his family's name to his restaurants "... out
of a sincere sense of pride and confidence in our menu and
staff."

'What Are Our Guests Saying
About Us?'
"This past month my mother came to
visit the family in Franklin. She was very ill and everyone knew it
would be her last visit. We all decided to take her to eat somewhere
special we have all never been before. I looked in the Diner's guide
for help, the restaurant was rated five stars so we knew that was
the one. On arrival, we were greeted with a smile by Shannon. She
politely took us to our table. After a few seconds a young waitress
greeted us with a welcoming smile. My mother who was ill had very
many request for food choices. Danielle was very attentive to every
need she had. Our food choice was made and the food came out very
quickly. It was presented beautifully. The food was superb, my
mother was telling us how she never had food like this before. We
all talk and laughed throughout dinner, and Danielle came back to
check on us. I told her about this being my mothers last visit, she
brought out a Mile High Pie and proceed to talk to us about Franklin
and the historical background. My mother was laughing with her and
talking with her. After the check arrived we paid Danielle and she
thanked us. But all and all we have to thank her. My mother went on
and on about our experience as a family eating together, and how
much fun it was. My mother died a few weeks later, but we will never
forget the experience at Copeland's. I would like to thank you and
especially Danielle for making my mothers last memory a rememberable
one. Please inform the staff and managers at Cool Springs Copelands
that people like Danielle think they only serve food and then they
leave but they give life to those around them."
